Cacao is made from the seed of the theobroma cacao tree which has been cultivated for over 5000 years for a wide range of uses including ceremony, currency and an age-old indulgence. The earliest evidence of cacao/cocoa in ancient culinary practices originate in Honduras, surviving civilisations such as the Mayans and Aztecs, spreading outwardly into the Andean regions of South America. Like many goods from around the world, it eventually made its way to Europe by the late 1500s where techniques were developed to produce the many different styles of chocolate we enjoy today. Similar to the coffee bean, cacao is now grown in tropical climates around the world from Tanzania, to Peru, to Mexico to Papua New Guinea (which is where we source our cacao for all our blends)
